A seafood restaurant with modern Italian flair is coming to Scottsdale, and its arriving courtesy of a well-known family of restaurateurs.
Set to open in late November at the Shops at Gainey Village, Cuttlefish Ocean Kitchen is the concept of Joey Maggiore, son of Tomaso Maggiore, who has owned Tomaso's in Phoenix for over 30 years. (Fun fact: In 2010, Joey Maggiore, along with his sister Melissa, starred in the Food Network reality show Family Style, which featured the siblings trying to make their new Italian restaurant, Tommy V's in Carlsbad, California, a success.)

Featuring environmentally conscious seafood flown in daily, Cuttlefish will offer both "classic and contemporary dishes with Italian influences and sustainability always in mind."
Helming the kitchen is Executive Chef Michael Dei Maggi, who, along with stints at Le Bernardin in New York City, and ZuZu, the Spanish restaurant in Napa, worked as chef de cuisine at the Monterey Bay Aquarium, where he helped to pioneer its "Seafood Watch" program in efforts to support healthy oceanic ecosystems.
On the menu, there are raw starters such as shrimp with Sicilian lemon ($12) and pine-smoked California albacore ($11) as well as shareable plates like crispy cuttlefish ($12) in garbanzo dusted flour and lemon aioli and octopus soppressata ($14) with grape tomatoes and Bloody Mary gelee.
Housemade pastas include spaghetti with dungeness crab ($24), Santa Barbara sea urchin, and local tomatoes. For signature house dishes, expect Verlasso Salmon ($26) with roman artichokes and crispy capers and pan-roasted wreckfish ($25) with white bean ragu and a radish salad.
Cuttlefish's 100-seat room will feature a raw bar furnished with custom-made Vespa seats, a corner patio, a 25-seat bar, and decor touches such as natural woods, stones and metals.
"This is a concept that my whole family has always wanted to bring to life," says Maggiore, who will operate Cuttlefish with his wife, Christina.
And Maggiore isn't planning on stopping with seafood. In mid-December, he'll open Notorious Burgers, a specialty burger and beer spot, located right next door to Cuttlefish.
