These grilled skewers have a hearty summer twist with potatoes. Paired with fresh zucchini, your meat or non-meat (see below) of choice, and a convenient dairy-free and gluten-free Italian dressing, this meal can be on the table in minutes.

Gluten-Free / Dairy-Free Grilled Skewers
Though this recipe may appear completely allergen-free, mystery ingredients can linger in the dressing and meat. For a solid Italian dressing or vinaigrette without any funny business, I recommend Annie's Naturals. They offer several intriguing options, including their Tuscany Italian and Lite Italian - both labeled gluten-free and vegan, and made without any dairy, soy, egg, nut, or tree nut ingredients. We also like the Whole Foods 365 brand, which has many affordable options that seem to mimic the Annie's line.
As for the meat, sausage or turkey kielbasa (a leaner option) can contain gluten and/or dairy fillers. Read the label carefully; brands such as Applegate Farms and Trader Joe's are quite forthcoming with easy-to-read, all-natural ingredients. Or you can go a completely different route with meat-free grilled skewers...
Vegan / Vegetarian Grilled Skewers
Who says grilling is only for meat? Follow the recommendations above for finding some dairy-free and vegan salad dressings, and opt for either vegan Italian sausages ( soy-based or artisan wheat) or my preference, all veggies. Eggplant chunks or whole mushrooms are a great fill-in and will keep the grilled skewers filling and meal-worthy.
